🍷 Wine & Food: French elegance with (sometimes) an Italian touch
A regular routine for us is the consultation during breakfast with our guests: "What are we eating today?"
At our bed and breakfast, refinement is key - including in our wine selection. We consciously choose wines that complement the character of the dish, with a clear preference for French terroir wines, supplemented by a few carefully selected Italian wines. More and more, we see that our guests appreciate Charles' wine choices.
Often, the dishes Tarcies prepares guide Charles' wine choice, but sometimes it's the other way around: "Shall we open a Sancerre tonight?" Then we opt for a light dish such as sea bass, baked on the skin with beurre noisette. The elegant white wines from the Loire with their freshness, minerality, and subtle citrus aromas are a perfect match.
France offers an unparalleled diversity of styles and regions. If grilled salmon is on the menu, we often go for a round Chablis, with its distinctive balance of freshness and structure.
For meat dishes or dishes with more depth, we favor elegant red wines from Burgundy, such as a Rully, or a soft yet robust wine from the Medoc. These wines combine finesse with subtle spiciness and complement the dish without overpowering it.
Occasionally, we add an Italian wine to our cellar. A smooth Dolcetto from Piemonte pairs well with Mediterranean dishes, while an elegant Barolo is an excellent match for a refined fillet of beef with truffle sauce.
Even when it comes to dessert, we think about harmony. A sweet (but not cloying) Maury or another French sweet wine pairs perfectly with our homemade chocolate fondant.
We believe that food and wine pairings are all about balance, quality, and experience. Our selection reflects our love for the French terroir, with here and there an Italian nuance - always chosen with an eye for detail and harmony.
